8 medium-dimensions vine-ripened tomatoes, cored and quartered lengthwise

4 teaspoons excess-virgin olive oil

Kosher salt

4 cloves garlic, smashed

6 thyme sprigs

(Can make about 1 quart)

Directions

1. Preheat the oven to 300 degrees Fahrenheit. Line a sheet pan with parchment paper.

2. Spot the tomatoes, pores and skin side up, on the prepared pan. Drizzle with the oil, sprinkle with salt, and scatter the garlic and thyme more than the leading.

3. Roast the tomatoes right until they have shrunken and shriveled and are starting to brown close to the edges but are not fully dry, 1 to 1 ½ hrs, relying on their dimension. Use heat, at home temperature, or cold.
