Start with Shrimp Scampi

What exactly is shrimp scampi? A basic shrimp scampi recipe calls for the shrimp to be cooked in a light garlic butter sauce and served over linguini. That’s delicious, which is why it’s a classic favorite. But what happens if you skip the pasta and use the shrimp scampi as a base for other menu items? If buttery garlic shrimp sounds good to you, here are three additional recipes you can make with frozen shrimp scampi:

Shrimp, Artichoke, Spinach Dip

This warm, melty, super savory dip is absolutely scrumptious served with toasted baguettes or crackers. Once you start munching on this, you won’t be able to stop.

Ingredients

1 12 oz. package frozen shrimp scampi

1 8.5 oz. can drained and quartered artichokes

1 9 oz. carton frozen spinach

1/4 cup bread crumbs

3 Tbsp sour cream

3 Tbsp cooked bacon crumbles

1 cup Parmesan cheese

Directions

Defrost spinach and drain well. Prepare shrimp in a skillet according to package directions. Add all other ingredients to the hot skillet and stir to incorporate. Cook until cheese is fully melted, about 3 minutes. Pour into a serving dish and serve immediately.

Shrimp Scampi Tacos

Buttery shrimp make these super easy weeknight tacos a meal everyone will love.

Ingredients

1 12 oz. package frozen shrimp scampi

2 cups white rice, cooked and still warm

2 limes, zest, and juice

1/4 cup chopped cilantro

6 soft taco size flour tortillas

1 cup chopped green leaf lettuce

1 cup shredded white cheddar cheese

Prepared salsa or pico

Directions

Prepare frozen shrimp scampi according to package directions. Mix together rice, lime juice, zest, and cilantro. Assemble your tacos in this order: lettuce, rice mixture, scampi, and cheese. Serve salsa on the side and enjoy.

Santa Fe Shrimp Salad

This flavorful, crisp salad is perfect for warm summer evenings.

Ingredients

1 12 oz. package frozen shrimp scampi

1/2 16oz. can black beans

1/2 can corn or 1 cup cooked frozen corn

2 Tbsp chopped fresh cilantro

1 medium tomato, diced

1 head of lettuce, chopped

Corn chips

Salsa and ranch dressing, optional

Directions

Prepare the shrimp scampi according to package instructions. Add cooked shrimp without butter sauce to a large bowl. Stir in beans, corn, tomatoes, and cilantro. Add salt and pepper to taste. Arrange shrimp mixture on a bed of lettuce and garnish with corn chips. Serve with salsa and ranch dressing if desired. Use garlic butter from shrimp to make garlic toast, which makes a delicious accompaniment to this tasty salad.
